Veggie Delight - Rice

Veggie Delight- Rice is an easy to make rice dish . Cook rice and boil veggies well in advance and you can make it quickly for lunch or dinner by following the step-by-step recipe . Serve hot with raita of your choice .

  Serves: 2
INGREDIENTS:                                                                                                               

1 1/2 cup cooked rice (long grained rice)
1/2 cup mixed vegetables( potatoes, french beans, carrot, peas), boiled and diced
1/3 cup chopped onions
1/3 cup chopped green bell peppers
1/4 cup chopped tomatoes
2tbsp curd
1tsp garam masala
4 garlic cloves
4 dry red kashmiri chilli
2tbsp oil
salt to taste
bell pepper slices for garnishing

METHOD :
1. Roast red chillies for a few minutes and pound it with garlic.



2.Heat oil in a pan and fry the onions.




3. Add the chilli - garlic paste and fry for a minute.





4. Add bell peppers and tomatoes. Cook for few more minutes.


5. Now stir in the curd and cook for another minute.



6. Add mixed vegetables, salt and garam masala. Mix well.


7. Add the cooked rice. 



 8. Stir well to combine.



9. Take it out in a bowl and garnish with sliced bell peppers. Serve hot

Pasta In Red Sauce

 'Pasta In Red Sauce' is one of my favorite pasta dishes.I make this using homemade pasta sauce. If you haven’t tried making this sauce, I recommend it.
Serves: 2
INGREDIENTS:                                                                                                                     
1 1/2 cup cooked pasta (I used fusilli pasta)
1/2 cup bell peppers (red, yellow, green), diced
2 tbsp sweet corn kernels, boiled
3-4 broccoli florets , blanched
1/2 tsp mixed herbs
1/4 tsp red chilli flakes
salt to taste
2tsp olive oil
water

METHOD:

1. Heat the oil in a pan. Add bell peppers.Stir fry.

2. Add corns, broccoli and cook for a minute.

3.Season it with salt, chilli flakes and mixed herbs.

4. Now add the pasta sauce and little water. cook for a minute.

5. Add cooked pasta to the sauce and toss to combine.

6. Serve immediately.


PIZZA AND PASTA SAUCE... MUST TRY!!!


This is a must try pizza and pasta sauce recipe. You will surely love this flavorful sauce. Prepare the sauce in large quantity and store it in the refrigerator. Use as and when required.

INGREDIENTS:                                                                                                     

1tbsp onion , finely chopped
1tsp garlic, crushed
2 large red tomatoes, pureed
1/2 tbsp red chilli sauce
1 tbsp tomato ketchup
2tsp sugar
1/2 tsp oregano
1/2 tsp dried basil leaves
1/2 tsp chilli flakes
1 tbsp olive oil
salt to taste

METHOD
TO PREPARE THE PASTA SAUCE
1.Heat the oil in a pan. Add garlic and saute for a minute.Add chopped onions and cook till it softens.

2.Stir in the tomato puree and cook till the sauce thickens slightly.

3.Now add the red chiili sauce, tomato ketchup and stir well.

4. Add oregano, dried basil leaves, chilli flakes, sugar and salt. Cook for 3-4 minutes.

5.Take it out in a bowl. Cool. Use as required.

NOTE:
I have given the measurements for a small batch. You can increase it as per your requirement. Do follow the same ratio for better results.

Rawa Dosa

This is my very first post and I'm super excited to share my very first recipe with you. This is one of my mom's favorite dish. So here is the recipe of quick and easy Rawa Dosa .


Ingredients:
1/2 cup sooji (rawa)
1/2 cup rice flour
2 tbsp all purpose flour (maida)
2 1/2 cup water (I used 1 cup of buttermilk and 1 1/2 cup of water)
1 onion, finely chopped
1 green chilli, crushed
1/2 tsp ginger, crushed
1 tbsp cumin seeds (zeera), roasted
2-3 tbsp coriander leaves, finely chopped
salt to taste
oil

Method:
1.Take sooji , rice flour and maida in a large bowl.

2. Add chopped onions, ginger, green chilli, roasted cumin seeds, coriander leaves and salt.

3.Prepare the batter by gradually adding water to the sooji mixture. Mix well.





4.Keep aside for half an hour.

5.Heat a non-stick dosa pan. Pour the batter using a ladle to form a thin dosa.




6. Apply oil all over the edges and in the center. Let it cook till it turns nice golden brown and crispy. Flip it over and let it cook for another minute or two. 




Serve hot with Coconut chutney and Sambar.
